200g farfalle or spiral pasta
1 spring onions
20g sun-dried tomatoes, cut into strips
400g spinach, stalks trimmed and leaves shredded
1 Yellow pepper
1/2 tbsp chopped oregano
20ml olive oil
1/2 tsp sliced chilli
1 garlic clove

1. Cook the pasta to the pack instuctions. Drain and rinse under cold water before draining again. Transfer to a large bowl.
2. Cut the sping onion, pepper and sun-dried tomatoes into thin slices. Add them to the pasta along with the spinach and oregano.
3. Crush the garlic clove and place into a small container that can be sealed. Also add the olive oil and chilli to the container before sealing and shaking well. Pour the dressing over the salad. Toss the salad before serving.
